Chicken Stuffing Casserole

I LOVE this casserole, super easy and delish!

Preheat oven to 350F
2 6oz. pkg chicken stuffing mix
1 1/2 lbs boneless skinless chicken breast (cooked/uncooked) cut/shredded into bite sized pieces
1 10oz can cream of chicken soup
1/3 cup sour cream (or sub chicken broth)
1-2 16oz pkg frozen vegetables (broccoli and corn are my favs but carrots, peas, green beans are good options too)
Optional: 1lbs bacon, cooked, chopped (we try to soak up some of the grease/fat with a paper towel)
Prepare stuffing as directed.
Mix other ingredients except bacon in greased 9x13 pan or two 8x8 pans (If I do two pans, I freeze one for reheating.)
Top with stuffing then bacon.
Bake 30 mins or until chicken is cooked.

Serves 4-6.
Great with garlic toast.

Sleep

Sleep can be hard to come by with an infant... Especially an infant whose idea of a nap is about 26 minutes.
So today, when my sweet baby fell asleep in the car driving home from JoAnn's, I was WAY more than tempted to drive around for an hour instead of going home, because this nap was so important after a cranky morning and Mommy could really use a little quiet time.
It never fails: I am so careful not to slam the car doors, I practically tiptoe into the house, start shoosh-ing the dog before I've even got the lock turned on the door, and set him down ever so gently on the floor. Then, I tiptoe back to the open door, slowly and quietly shut it, turn on the air and fan for some white noise and quickly try to grab a snack before the inevitable happens... I hear him squirming, feet kicking, and grabbing the seat cover trying to shove it into his mouth. This nap lasted only 3 miles and five minutes....
Does that make me a bad mom? That I'd rather drive around the city for an hour for no reason other than wanting my little one to get some sleep?? If only I'd actually done it...
